Hi friends! In case you were wondering, Indiana is still an intolerable frozen tundra/pretty winter wonderland (depending on if you’re a glass-half-full or glass-half-empty type person. Personally, I would hop on the next plane to Florida if I just had that darn trust fund).
This was the scene outside my work window today:
We left work at 3:30..thanks, snow! I’m sorry I said mean things about you.
I made it to the gym, but was NOT feeling it. You know when that happens? I did a half-hearted 2.5 miles, but my legs kind of felt like lead. I think my body is just in shock from the exercise I’m giving it as opposed to the abundance of Doritos and beer it received over the holidays.
But that’s ok, because you never regret a workout! That’s one of Caitlin’s mantras, and it’s really true. Once it’s over, you’re glad you did it, even if it wasn’t the best one ever. It works every time in getting me to the gym (ok, not EVERY time).
I was on my way home from Target tonight, and I heard THE most disturbing remix of Beyonce’s ”Halo” and some kid singing ”Walking on Sunshine”…huh? It didn’t even involve Beyonce. Whoever came up with that needs to find a new job and unfortunately, they didn’t do it soon enough because now it’s running through my mind as I type. Aaaah!
Speaking of Target, look what greeted me as soon as I walked in the door:

Wow. Really, Target? Thanks for rubbing it in that the closest thing us Midwesterners will see to a beach in the near future is “Bridget’s Sexiest Beaches.” Awesome.
Before my depressing Target trip, I made dinner:

Yep, that’s OATMEAL you’re staring at! But it’s not just any oatmeal….it’s savory mushroom oats! I have been scared to try “savory oatmeal” as opposed to sweet, but tonight I decided to give it a go. The ingredients:

It was pretty simple, and actually would have been great with the addition of broccoli and peas, but I didn’t think about that until after the fact. I just combined:
–1/2 cup oats
–1 cup water
–1 egg (I ditched some of the yolk…I need to just buy some egg whites)
–A couple dashes of sea salt
–Chopped mushrooms
–Soy sauce
All of that went in the bowl. Then I microwaved for two minutes, stirred, and cooked another minuted. Then I topped with more soy sauce and ate! My sister had some and gave it her seal of approval:

It sounds weird, but tasted really good–more like stir fry than oatmeal. If I had closed my eyes I would have though I was eating rice. I really like my microwave, apparently.
And for some reason, my sweet tooth has been out of control lately:

That’s a small bowl of peppermint ice cream with the somewhat random addition of miniature M&Ms and a Reese’s peanut butter cup. SO good, and as usual, I’m fighting the urge to go back for more. We’ll see how that turns out.
My dog is currently trying to climb on top of my TV stand because he’s so bored. I’m gonna go take care of that situation.

Bathing suits already???!!! Ugh.
I’ve tried oats like that and I love them. Yea, I saw swim suits like that t Old Navy…I mean winter has another month down here. crazy
That must have been some Glee music playing at Target. That’s not one of my favourites, but most of the music on the show is great!
I’m impressed that you tried the savoury oats! I’ve been toying with the idea for weeks but just can’t wrap my head around it. I’ll have to try your recipe!
I’ll take pictures of the beach for you! Next best thing, right? It’s supposed to “snow” tonight. Snow on the beach looks pretty…too bad it’s a 40% chance of 7/8 of an inch. And yes, all schools/daycare/battalions/etc. are already delayed 2 hours as of 4pm today.
I tried spinach feta oats, it was ok, but not really, I’m scared to try again, but mushrooms sound good!
Mmmm candy. Must forget about the stash in the back of the cabinet…..
I did see the swimsuits out when I went to Target the other day. I see it as just more motivation for me to keep on plan.

i love hte mantra about never regretting a workout- when ic an exercise again, i am going into it with a WHOLE different outlook! any physical activity whatsoever is good for you, who cares how much ?? and savory oats sound so good!

Target is crazy…they carry things like 4 months in advance. Ridiculous!!
I’m in California at the moment but no beach for me. Next week I’ll go back to upstate NY and we’ll be in the same boat (no pun intended)!
Oooo oats and sauce is good!! I love them for dinner and for breafast. I don’t eat oats too much, but when I do I savor them!
