I had every intention of making it to the gym this afternoon…but alas, my plan failed. Although I guess when you just flat-out don’t do something, you can’t really refer to it as a fail. 🙂
Since my mouth is still sore and my gums are still swollen (wah) I decided I needed another fun activity to take the place of my planned run. The level of physical activity dropped dramatically, but I’m over it. The dentist told me to take it easy for a few days…so I’m obliging.
Enter my new plan for tonight, which was a fun experiment: Spicy Cheddar Cornbread!
Eating instead of running. Eh, a good swap? Sure.
At least it’s pretty healthy (NO OIL)! And quite pretty, if I do say so myself:
Recipe! (adapted from this):
–1 cup stone ground whole wheat flour
–1 cup cornmeal
–1/4 cup sugar
–1 teaspoon baking soda
—3/4 teaspoon salt
–1 cup plain nonfat yogurt
–2 eggs, beaten
–1/2 cup shredded sharp cheddar cheese
— dashes of red pepper flakes, chili powder, and cajun seasoning
Preheat oven to 400 degrees. Lightly grease an 8×8 inch baking pan. In a large bowl, mix flour, cornmeal, sugar, soda, and salt. Stir in yogurt, eggs, and cheese (stir only until blended–do not overmix). Pour batter into pan. Bake for 20 to 25 minutes.
This was delicious! A little spicy, not too sweet, and lightly browned edges–all with no butter, or oil. Here is Riley, waiting patiently to give it a taste test. I don’t trust my own testing, and when there’s no one else around, what’s a girl to do?

I got home from work and it was one of those nights where I just felt like eating snacks for dinner. So that’s what I did! I started with a bowl of Puffins with skim milk:
And then I rounded out my dinner o’randomness with a piece of fresh-baked cornbread!
So, despite today’s evidence to the contrary, I am really looking forward to training for the Indianapolis 500 Mini-Marathon in May! I need some inspiration, however.
Every girl who’s ever looked in the mirror at the gym and been horrified by the saggy shorts and stetched-out top staring back at her knows that inspiration starts with running gear. Well, probably not all girls. It could perhaps just be me.
But that leads me to my question of the day: where can I find a cute running skirt? Target used to have them, but continuing in its quest to alienate me and lose my business completely, Target has let them all literally disappear from all stores. Thoughts?
